CHOCOLATE FILLED CUPCAKES

2/3 C. oil
2 C. sugar
1 egg, beaten
1 tsp. salt
2 tsp. soda
3 C. flour
1/4 C. cocoa
2 C. water
2 Tbls. vinegar

Cream oil, sugar and egg. Add salt. Add dry ingredients alternately with water and vinegar. Spoon into paper cupcake cups about 2/3 full. spoon about 1 tsp. filling into center of each cupcake. Bake at 350 for 25 minutes. Makes about 28 cupcakes.

6 oz. cream cheese, softened
1/3 C. sugar
1 egg
pinch of salt
1 C. chocolate chips, (semi-sweet)
