Mexican Manicotti

Ingredients:
1 pound ground turkey 1 (16 ounce) can refried beans 1 (1 ounce) package taco seasoning mix 14 to 16 manicotti shells uncooked 1 (12 ounce) bottle green taco sauce 3⁄4 cup water 1 cup Mexican shredded cheese 1 cup shredded lettuce (opt. topping) 1 cup diced tomatoes (opt. topping) 1 (2.25 oz) can sliced olives (opt. topping) |
Directions:
Spray a 9x13” baking pan with nonstick cooking spray and set aside. Preheat oven to 350 degrees F. In a skillet pan over medium heat, brown ground turkey and drain. In a bowl, mix cooked ground turkey with beans and taco seasoning mix. Spoon ground turkey into uncooked shells by using a small spoon and stuffing it in both sides of the shell. You could also scoop the ground turkey mixture resealable plastic bag, then cut one corner off and squeeze the mixture into each manicotti shell. Lay stuffed shells into a 9x13” pan. Mix green taco sauce with water and pour over manicotti. Cover pan with foil and bake for 1 hour. Remove from heat and sprinkle with cheese. Put back in oven until cheese is melted, about 3-5 minutes. Garnish with toppings, if using. Note: Nutrition facts do not include optional toppings. |
